Named after our local nun, Sister Alice, this IPA offers up a barrage of citrusy and tropical flavors with a gentle malt structure neatly wrapped in a session strength package. The beguiling deep golden color is capped with a sturdy, brilliant white foam crown, presenting profound aromas of grapefruit, passion fruit and tangerine. A smooth sipper!
Our Blonde Ale is made with 90% NY grain, hopped with Cascade hops from Beech Hill and dry hopped with some Simcoe. Crisp, elegant, and easygoing - you can't go wrong with the American Blonde. A great all-purpose pint, pale in color with a little more bitterness than our Killer Lite. We recommend this ale to be the next step up for any new craft beer drinker.
An American adaptation of a colonial English Porter. Medium to dark brown, with some ruby and mahogany highlights. A light tan head will persist in the glass of this smooth grain malt flavored porter. Low levels of chocolate and toasted malt notes, along with hints of caramel, coffee and, licorice find your taste buds. Our Porter uses 81 % NY Craft ingredients. Lightly hopped with NY Cluster and Cascade.
Named after Tom’s grandfather Henry, this delicious German style ale utilizes the famous Weihenstephan wheat yeast producing the flavor profile of spicy cloves and distinctive banana esters. Using 95% NY Craft malt US grown hops, this recipe brings Bavaria to town! A hazy, deep golden ale with a firm and lasting white head and heaps of flavors consisting of soft, luscious wheat notes and, medium-low bitterness topped with fruity deliciousness! Prost!
Our Oatmeal stout, named after Wells Stout!
Our Oatmeal Stout is based on an English style Stout. We used oats to build body and add a touch of silkiness to the mouthfeel. It’s dark, rich, with roasted flavors and aromas of coffee and chocolate notes... Enjoy!
An extremely malty beer that really emphasizes malt over hops. Most styles are more balanced, which means the bitterness of the hops is proportional to the sweetness of the malt. Not true with Brent’s Smoked Scotch Ale where the deep malt flavor is king. This recipe has has about 6 lbs of NY Craft Smoked malt in it, which gives a slight smoked flavor. After putting out the fire with that big hose, sit back and have a pint of Brent’s Smoked!
This is another of our SMaSH recipes. (Single Malt and Single Hop) I use plenty of Mosaic hops into the whirlpool and again in the dry hopping stage. This is to feature the wonderful taste and aroma of this hop. Carrying flavors of mango, pine, citrus, and aromas of tropical and stone fruit, this ale is sure to please the Hophead among you!
An IPA featuring the Mandarina Bavaria hop. This Ale was named after Mote Tarantine, who helped run Wellsville’s old airport on the Bolivar Road and get the second airport built on top of Niles Hill. Mote flew over the “Hump” in China during WW II. He also ran the Airport Drive-In on the Bolivar Road. This ale will give you a taste of tangerine with a nice citrus aroma.
This is a clone of Founder’s All Day IPA. Brewed with local NY Craft 2 Row barley and some flaked oats, the ale is then hopped with Amarillo and Simcoe hops. It ferments out around 4% ABV. You can drink more than one of this beer, on a nice warm summer day or really anytime!
Just like our American Blonde, only better with blueberries! This ale starts with the tasty aroma of fresh blueberries and finishes with the tartness of our blonde ale. A cult favorite in our line up!
A marzenbier style beer that features a lager yeast! This one takes a bit longer to brew up. This fest beer, historically brewed in spring and aged in cold caves over the summer, is a copper colored Lager with an emphasis on that German malt flavor. Munich and Caramunich malts contribute the copper color and a unique subdued toffee/malt flavor. We proudly honor our local hospital, U of R-Jones Memorial, and their fall fund raiser with this annual release!
Our friend and fellow home brewer, Ken Gough, came up with this recipe. We liked it so much we decided to give it a try. Hop Star has a nice malt base with a some Centennial hops in the boil and added hops of Citra and Mosaic in the dry hop phase.
A very pleasing and somewhat hoppy ale!
Another recipe from our friend Ken Gough! He experimented with some Cashmere hops and thus was born, Shangri-La. Cashmere was developed at Washington State University and released in 2013. This hop is a marriage between Cascade and Northern Brewer. This ale might give you some flavors of lemon, lime or melon. It is has a smooth bitterness and is mildly aromatic with subtle herbal bouquet. As you quaff this beer, it might just take you away to Shangri-La.
Our Irish Red Ale is named after Shaun’s father. It is a malt-forward ale brewed with a nice, well-kilned pale malt with some adjuncts of roasted barley. The roasted barley gives it a beautiful red color and along with the English Ale yeast used in the fermentation gives it a bit of a dry finish. Hops are kept to a minimum so that the malt flavor is the star in this production. First brewed in Kilkenny, Ireland in 1710, this style has made a comeback! Relax and enjoy this wonderful style...
This is a “brut” style IPA that features Hallertau Blanc and Tadif de Bourgogne hops. Hallertau Blanc should exhibit some floral or fruity notes to it, while the Tardif may have a more subtle lavender, honeysuckle or chamomile tastes.
The two enzymes we add to the mash and fermentation helps reduce gluten in the beer and to break apart starches and dextrin in the beer to allow fermentation of most of the sugar allowing the beer to have a more dry mouth feel.
This is another one of our SMaSH series of ales. I used plenty of Julius hops which is a hybrid of the Cascade hop. This ale would be one to try if you wish to start trying a beer with a little more hop flavor, but one that won’t overwhelm you with bitterness. Named after our mentor Phil Hyer who taught us to brew many moons ago.
A hophead double IPA! A base malt of 2-row with some aromatic and victory malt blended in gives this a nice amber color, but the star of this ale is the aggressive hop schedule. Brewed in a similar way to Dogfish Head’s 90 minute IPA, we have multiple hops added every few minutes. The ABV is more than we usually we do, coming in around 7.5%. Enjoy!
This is a clone of Bass Ale, an English Bitter Ale. A lightly hopped ale with a heavy malt profile, a touch of fruitiness will come through with the yeast we used - Burton Ale Yeast from White Labs. It produces a subtle fruity profile which can be described as notes of apple, clover honey and pear.
This ale is named after the old Wellsville-Addison-Galeton railroad line, which is now a favorite hiking trail along the Genesee River. After taking a hike along the trail, give this ale a try!
Michigan Copper™ is described as a vigorous super-aroma hop with very fragrant floral and tropical fruit aromas and flavors. Rich in fruit and candy notes, this hop has been likened to Hawaiian fruit punch, black cherry, red hard candy, and hibiscus resin. Our SMaSH recipe call for a plentiful dosing of this hop locally grown by Crooked Creek Hops from Addison, NY.
This IPA features Zappa hops. Zappa™ is a 100% Neomexicanus aroma hop from the mountains of New Mexico. Zappa™, has developed its own rebellious aroma and unique flavor characteristics. Some have described the aroma or the flavor as passion fruit, mint, spice, savory tropical and fruity pebble!
A remix to the perennially classic Saison style, the Blood Orange Moon Saison is a fantastic rustic ale that lends a fierce citrus character to the spice of the traditional Saison yeast strain. A savage dose of blood orange puree adds additional fierce citrus character to compliment the estery, spicy,and peppery tones spawned by the yeast. The result is a delicious ale with a juicy twist!
This is our version of Bell’s Two - Hearted Ale. All NY Craft barley and Crooked Creek Centennial hops, this IPA is a true Centennial hop bomb! Using Centennial as the bittering, aroma, and dry hop additions shows how incredible and universal this hop can be.
Light in color and body, the malt character hides little, allowing the burst of Centennial flavor and aroma shine. Coming in at right around 6% ABV, this isn't one of those IPAs that will make you shy away from a second!
With our NY Craft Malt Pale Erie Canal 2-row malt and additions of rye and Heather tips, this Irish- Scottish ale, has a unique malt complexity offset by the floral aromas of the Heather tips. Both the flowers and the vegetation of this wonderful herb, Heather, deliver a pleasing aroma and smooth bitterness to beers. Heather was used prior to the use of hops in a fermented beverage known as gruit. Also used in an ancient Gaelic recipe for "Leann Fraoch" (Heather Ale) Slainte!

This very drinkable beer is brewed with seven different hops beginning with the letter C, this IPA will strike a “chord” with any IPA enthusiast!

Keuka Craft Ciders' Medium Sweet Cider is crafted from local apples from the Penn Yan area. It has a light summary flavor with hints of green apple and is well balanced with 3% residual sugar. *Gluten Free
Keuka Craft Ciders' Northern Spy Cider is crafted from Northern spy apples from the Penn Yan area. It had a short natural fermentation which added more natural flavors to it. Champagne yeast was then added for a more active fermentation. This cider has a nice sweet and tart flavor with hints of apple, pear, and quince.
